This Easter try a simple, nutritious watermelon “cake” recipe!

It can curb just about any sweet tooth and your entire family will love it!

Ingredients

  • 1 seedless watermelon cut into a cake shape
  • 1 32-ounce container of Greek yogurt
  • Blackberries
  • Blueberries
  • Raspberries
  • Strawberries
  • Sliced almonds

Directions

  • Slice and cut the watermelon into the shape of a cake with a flat top.
  • Refrigerate it for several hours or place it in the freezer for 30 minutes.
  • Top your “cake” with Greek yogurt instead of frosting.
  • Decorate the cake with berries, other types of fruit, and sliced almonds if you'd like.
  • Cut the cake into slices, serve, and enjoy it with your family on Easter!

Healthy Apple “Doughnuts”

  • 3 apples

Easter Nest Bagels

Ingredients

  • 2 whole-grain bagels
  • 4 tablespoons of hummus
  • 1 large carrot
  • 1/4 cucumber

Instructions

  • Split each whole-grain bagel in half and toast it in a toaster until golden brown.
  • Spread each bagel with hummus.
  • Cut a carrot into thin strips using a julienne peeler, grater, or a sharp knife.
  • Place the carrot strips on top of each bagel to form a “nest.”
  • Cut mini round or oval “egg” shapes out of the cucumber.
  • Place three cucumber eggs in the center of each carrot “nest”.

  • Insert a tiny piece of parsley into the top of the carrots.

Ingredients

  • Honeydew melon or cantaloupe, peeled and cut into slices
  • Plain or strawberry Greek yogurt
  • Blueberries, sliced strawberries, grapes, raspberries, etc.
  • Sliced almonds (optional)
  • Cinnamon (optional)

Instructions

  • After peeling and cutting your melon into slices or circles, top each with Greek yogurt.
  • Place a nutritious topping of your choice (berries, grapes, almonds, cinnamon, etc.) on top of the melon slice.

Apple Fruit Baskets

Ingredients

  • 4 apples
  • 3 cups of club soda
  • 2 cups of diced strawberries, apples, kiwi fruit, pineapple, blueberries, raspberries, pears, or any other fruit of your choice.

Instructions

  • Cut the tops off of each apple.
  • Scoop out the inner part of each apple, leaving 1/4 inch around the outside to form a basket shape.
  • Place the apples in a bowl and fill them with club soda. Soak the apples for a few minutes to prevent them from browning.
  • Pour out the club soda and fill the apple baskets with diced fruit of your choice.
  • Refrigerate the baskets, serve them when you're ready, and enjoy these treats with your friends and family!

Easter-Egg Popsicle Smoothies

To create a refreshing, healthy sweet treat to replace Easter candy this season, consider an Easter-egg popsicle smoothie recipe.

Ingredients and Equipment

  • 6 plastic Easter eggs
  • 6 lollipop sticks
  • Sharp knife
  • Small funnel
  • 1-2 cups of mixed berries
  • 1 – 1 1/2 cups of coconut milk
  • 1/2 banana
  • Vanilla protein powder (optional)

Instructions

  • Place the berries, banana, coconut milk, and protein powder (optional) in a blender and blend the mixture until it's smooth.
  • Using a sharp knife, poke a small hole in the bottom of each plastic egg. Make sure the eggs are tightly closed.
  • Using a funnel, place the smoothie mix into each egg and put a lollipop stick in each hole.
  • Freeze the egg popsicle smoothies for at least 6 hours.
  • Serve cold and enjoy them with your friends and family on Easter Sunday!

Fruit Flower Bouquets

Ingredients

  • Honeydew melon, sliced
  • Cantaloupe, sliced
  • Handful of green grapes

  • Wooden skewers
  • Greek yogurt (optional)

Instructions

  • Peel the melons and cut them into slices.
  • Using mini flower cookie cutters, shape the melon into flat flower shapes.
  • Thread a grape into each wooden skewer, and top it with one flower-shaped honeydew melon and one flower-shaped cantaloupe.
  • Top each “flower” with a blueberry.
  • Place the flower bouquet in a vase, serve, and enjoy!
  • Dip each skewer in Greek yogurt if you'd like to.

Chick Deviled Eggs

Try this cute chick deviled eggs recipe to turn traditional Easter deviled eggs into a fun experience for your kids!

Ingredients

  • 6 hard-boiled eggs
  • 2 tablespoons of avocado-oil mayonnaise
  • 2 teaspoons of yellow mustard
  • A pinch of salt
  • 1 carrot, washed and shredded
  • 12 black peppercorns

Instructions

  • Cut a small slice off of the bottom (flat end) of each egg.
  • Cut the top (pointy end) off of each egg as well. Save the tops.
  • Scoop out the egg yolks and mix them with mustard, salt, and mayonnaise.
  • Place filling back inside each egg so it's taller than the tops of the eggs.
  • Top the filling with an egg-white top.
  • Place 2 peppercorns and a carrot piece into the egg-yolk mixture to make a chick face. Use tweezers to create the chick faces as needed if it's easier.
  • Place the remaining carrot pieces under each egg to create feet for the chicks.
  • Serve the deviled chick eggs within two hours of making them and serve them cold.

Cheese and Cracker Chicks

Try this cute cheese and cracker chicks recipe as a fun Easter snack idea your kids will adore!

Ingredients

  • 8 whole-grain, circle-shaped crackers
  • 8 ounces of your favorite cheese
  • 1 cup of baby carrots
  • 8 jumbo black olives
  • 1 cup of spinach

Instructions

  • Lay out the spinach leaves on a serving platter.
  • Place whole-grain crackers on top of the spinach.
  • Cut sliced cheese into circles that fit on top of the crackers (each cheese slice should be slightly smaller than each cracker).
  • Cut a carrot into small sticks that look like feathers. Place them on top of each chick's head.
  • Cut another carrot into 16 thin round circles to make chick feet and 8 triangles to create chick beaks.
  • Cut the olives into tiny pieces to make eyes for each chick.
  • Serve the cheese and cracker chicks on a platter and enjoy!

Try this fun Easter idea for your kids, their friends, and yourself!

Ingredients and Equipment

  • Washed baby food jars
  • Paint pens
  • Greek yogurt
  • Shredded coconut

Instructions

  • Use the paint pens to draw eyes and a beak (a chick face) onto each baby food jar and let it dry.
  • Fill the jars with your family's favorite Greek yogurt and top it with shredded coconut.
  • Serve and enjoy!

Frozen Banana Bunny Pops

Consider this simple, two-ingredient healthy Easter recipe for your family and friends!

Ingredients and Equipment

  • 4 bananas
  • dark chocolate pieces
  • Popsicle sticks

Instructions

  • Cut each banana in half.
  • Push a popsicle stick into each banana piece and freeze it for 5 minutes.
  • Melt the dark chocolate in the microwave until smooth and cool it slightly.
  • Remove the bananas from the freezer and dip them into the dark chocolate. Place the banana pops on wax paper.
  • Stick raisins, nuts, seeds, etc. into the bananas to create eyes and a nose or mouth if you'd like.
  • Store the pops in your refrigerator.

No-Bake Easter Egg Fruit Tarts

Instead of Easter candy this year, consider this egg-shaped fruit tart recipe instead!

Ingredients

  • 1 cup of almond butter
  • 2 teaspoons of vanilla extract
  • 1/4 cup of honey
  • 2 cups of oats
  • 1/4 teaspoon of salt
  • 3/4 cups of vanilla Greek yogurt
  • 3/4 cups of blueberries
  • 3/4 cups of strawberries
  • 1 medium banana
  • 3/4 cups of green grapes

Instructions

  • Add the almond butter, vanilla, honey, and salt to a microwave-safe bowl and heat the mixture in a microwave for about 20 seconds. Stir the mixture until it's smooth.
  • Place 1 cup of oats in a blender and blend to a flour-like consistency.
  • Add 1 cup of oats to the almond-butter mixture and stir well.
  • Add in the oat flour, a little at a time, until the mixture becomes a thick consistency you can form into a tart.
  • Form egg-shaped tarts and place them on parchment paper or foil.
  • Spread Greek yogurt over each tart and top with sliced fruit.
  • Serve and enjoy!
